Does anyone know where I can find documentation for the fields of the $Product object? Or does anyone know how to get the image from the $Product object?

There is no product object, it is an array. Also on different pages it contains different info. Best way to find out use the debug console or just dump the $product array on page load

Scribler, are you familiar with webmaster mode? If not there is a tutorial page linked in my sig. You could use webmaster mode (debug console as Steve mentioned) to determine the contents of the $product variable.
